Breakfast: Raisin Bran (i left the house without grabbing the banana, ha)

Dinner: Chicken Tortilla Soup, Organic Green Beans, & Whole wheat roll.

See ya tomorrow, Day 7!

Day 5 of 10: Video Post

For Day 5, I thought I would post a video blog explaining my day.  Again, for those of you wondering, this is just a little challenge I am doing for myself.  I found myself skipping breakfast and then not taking the time to prepare healthy meals like I should be.  These 10 days are about eating better (including LOTS more fresh veggies and fruits) and getting some sort of work out in each day.  Even if it is something small each day, it is better than nothing.

Why does that have to be the face chosen for the freeze screen?  Oye! LoL

Breakfast: Here is the beautiful cafe mocha that I had today at Rush Espresso.  See the Palm Tree?  I did have a blueberry bagel with cream cheese also, but I forgot to take a photo cause I was so hungry.

Lunch: Chicken Tortilla Soup. Leftovers are so great!

Dinner: Homemade Macaroni & Cheese (recipe here), Salad, and strawberries

5 Days down, 5 to go.
Feeling Great.

Day 4: Not as successful

In general, Sunday's are not the most productive day for me.  After going to church and eating lunch, it's usually a smooth sailing, relaxing day.  So, I must admit, I did not "workout" yesterday.  I did, however, eat 3 great meals and even grocery shopped for lots of yummy fruits & veggies from Aldi.  It was also our first day of doing our taxes, so that is enough of a mind workout. LoL.

For dinner I made an AMAZING Chicken Tortilla Soup that Rebekah w/ Tirzah Photography told me about.  You can read my blog post about that here.

Breakfast: Blueberry bagel & bananas

Lunch: Salad topped w/ red, yellow, & orange peppers and balsamic dressings, and a bowl of oranges and strawberries! Mmmmm.  All fruits and veggies.

Dinner: Chicken Tortilla Soup topped w/ avocado, cheese, and sour cream.  Here is the recipe.

Personal Challenge: Day 3 of 10

Here I am at Day 3.  So far I have eaten and documented 9 meals, worked out 3 times and guzzled lots of water.  I feel great and I'm feeling motivated to follow through with my little challenge.

Yesterday was a very rainy and cozy day.  TJ worked on his guitar pedalboard and I blogged, made us a waffle lunch, and made some yummy Lacy Oatmeal cookies (recipe here).  For dinner we were invited over to Jamison & Mallory's house (my brother and sister in-law) along with all of the family for a spaghetti dinner.  It was amazing!  Both Mallory and Alisha are running a marathon in April, and they needed to eat a pasta dinner in preparation for their Sunday training of 18 miles!! Yikes.  I can't imagine running 18 miles, but I am so proud of them!
We ended up getting home late last night and I had still not worked out.  I so wanted to just ignore it and get in bed.  But, I decided to do sit-ups.  I did 6 different sets of 20.  Something is better than nothing...can I get an amen?! :-)

Here is a photo of Mallory & Alisha today after their 18 mile run. Thankfully it didn't rain!

Breakfast: Raisin bran, bananas, & strawberries

Lunch: Waffles (made from Trader Joes Pancake Mix - AMAZING) & scrambled eggs
(I forgot to take a photo before I started eating)

Dinner: Spaghetti, Salad, & garlic bread

Bon Voyage, Day 3.  Hello, Day 4!

Day 1 of 10

Day 1 has come to an end.  The eating part was easy, but the work out part was, um....lets just say I waited to the last minute of the day.  Not so much because I did not want to, but because I got caught up with some photo work and I watched a documentary this afternoon ("Who killed the Electric Car").  I ended up working out around 8pm.  On Netflix I found this 38 minute workout by "SELF".  It incorporated cardio, light weights, and plyo.  I did about 30 minutes of it. :-)  Small beginnings. haha.  Needless to say, I felt it and I know I will feel it tomorrow.

What I ate today

Whole Wheat Bagel, Strawberries, & Mandrin Oranges

Pasta w/ Pesto, Pizza, & Salad w/ Balsamic Vinegar

Soft Tacos w/ Black beans & Rice, & Strawberrys

To top it all off......Mint Chocolate Chip Icecream. :-)

How much water I drank (and a little video)
I drank about 72 ounces today.  I could have done better.  But, again, it was only Day 1.

All in all, I think Day 1 went well.  Here's to Day 2!

My 10 day challenge

Ok, so beginning tomorrow I am going to begin working out, eating 3 full meals a day, and taking care of myself better.  I am one of those people who typically skip breakfast, but I have been reading lately about all the health benefits of starting out the day with a morning meal.  (I will post these benefits soon).

Here is my public pledge.

For 10 days I am going to post daily...
  • photos of my meals (breakfast, lunch, and dinner)
  • explain my my workout for the day
  • keep track of the ounces I drink in water.
Why am I doing this?  I want to feel healthy, energized, and live long. Why else? :-)  I am also going to Ireland in May, and I want to be in great shape.

Why 10 days?  I am starting with a small goal that seems doable.  Too many times I quit before I begin because it seems TOO big.  Ten days feels good and by blogging about it daily, it will keep me motivated.

Here's to tomorrow.  Cheers!
